- Great gluten substitute for low-carb, gluten-free baking
- Improves the texture of baked goods, makes them more supple and less crumbly
- Thickener and emulsifier for sauces, soups and gravy - use it instead of cornstarch
- A very small amount is usually required in recipes (1/2 - 1 of a teaspoon, around 2-5g)
